For our first dinner at Napatini, we are excited to share selections from Sonoma's Chalk Hill Winery. In addition to some classic Sonoma varietals, like chardonnay and pinot noir, we are excited to share two distinctly different red blends. For this dinner we'll feature a combination of wines sourced throughout Sonoma, as well as a few estate grown selections. Chalk Hill is known for its chalky terroir and soil composition, a highly sought after aspect of grape growing. This type of soil creates wines with great minerality and balance. Tabitha Arizini will be joining us from the winery to discuss the Sonoma wine region, winemaking, and the rich history of Chalk Hill. You won't want to miss this memorable evening of wine, food and conversation from both Tabitha and Chef Erin!
Each selection will be paired with its own wine inspired dinner course, prepared by Chef Erin Sealy. Chef Erin specializes in pairing food with wine, with a slightly different approach than most. Prior to creating a menu, each wine is tasted and reviewed and then she creates a food pairing, highlighting the nuances of each wine. This concept creates a dinner and pairing experience with layers of complexity and unique creations which exemplify the enjoyment of each wine. With a passion for food and wine, Chef Erin delights attendees with a detailed account of the pairing concept and cooking techniques that create each course.
